My husband not so much he isn’t really a fan of potatoes. So, I set out to find something to satisfy my craving but would be something that he would love as well. I finally settled on a loaded cauliflower mash, it tastes so good and is so easy to make not to mention better for you than the original. Have you ever tried loaded mashed cauliflower? Start by laying out your cream cheese so it can start to soften. After that wash your head of cauliflower, cut it up and place in pot of water to boil. While this is going on I like to fry some bacon and crumble it. This is also the perfect time to shred your cheese if it isn’t already shredded. Once the Cauliflower is fork tender, drain off the water and mash the cauliflower. Next mix in the shredded cheese, bacon, and cream cheese mixing well.
After mixed place in oven safe dish, cover top with cheese. Bake until cheese is melted and golden brown.

Loaded Mashed Cauliflower
Ingredients
- Head of Cauliflower
- 2 oz Cream Cheese
- 1/2 C. Bacon Crumbles
- 1/2 C. Shredded Sharp Cheddar Cheese
Directions
- Preheat your oven to 350 degrees. Spray your baking dish with nonstick spray.
- Rinse your head of Cauliflower, Cut it up and boil until fork tender.
- Drain water off of Cauliflower and Mash.
- Fry your bacon until crispy, once cooled crumble and set aside.
- Mix everything together until well combined.
- Transfer to prepared baking dish. Bake 10 to 15 minutes until cheese is melted.
