Ingredients:

2 cups flour

1/2 cup sugar

1 tbsp baking powder

1/2 cup white chocolate chips

1/2 cup dried cranberries

1 stick unsalted butter

1/2 tsp salt

1 egg

1/2 cup sourdough discard

1 tsp vanilla extract

3 tbsp heavy cream

Instructions:

In a large mixing bowl, whisk together the flour, baking powder, salt and sugar, white chocolate chips, and dried cranberries.

Cut the cold butter into small cubes and add it to the dry ingredients. Use a pastry cutter or your fingers to mix the butter into the flour mixture until it resembles coarse crumbs.

In a separate bowl, whisk together the egg, sourdough discard, vanilla extract, and heavy cream. Pour the wet ingredients into the dry ingredients and mix until just combined.

Turn the dough out onto a lightly floured surface and shape it into a circle about 1 inch thick. Cut the circle into 8 wedges and place them on parchment lined baking sheet.

Put in the fridge over night to let fermentation take place.

Preheat your oven to 400°F (200°C)

Bake the scones for 15-18 minutes, or until they are golden brown and cooked through. Allow them to cool slightly before serving.
