Since I decided to make a sourdough starter, I had to figure out a way to keep the discard from going to waste. So, I set out on a mission figure out something that I could do with the discard that my family would love and was not all that hard to do. So, I settled on discard sourdough pretzel bites. Why Pretzel Bites? Packed with flavor and a delightful chewy texture, pretzel bites are the ultimate snack or appetizer. Plus, they’re incredibly versatile – perfect for dipping into mustard, cheese sauce, or your favorite savory dip.
🌾 What You’ll Need:
- 1 cup sourdough starter discard (unfed)
- 1 1/2 cups warm water
- 1 tablespoon brown sugar
- 2 teaspoons active dry yeast
- 4 1/2 cups all-purpose flour
- 1/4 cup baking soda
- Coarse salt, for sprinkling
- Beaten Egg
👩🍳 Instructions for Pretzel Bites:
- In a large bowl, combine the sourdough discard, warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until the yeast is activated and foamy.
- Gradually add the flour to the mixture, stirring until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until it’s smooth and elastic.
- Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours until doubled in size.
- Preheat your oven to 450°F and line a baking sheet with parchment paper.
- Punch down the risen dough and divide it into small pieces, rolling each piece into a ball.
- In a large pot, bring water to a boil, then add the baking soda. Carefully drop the dough balls into the boiling water, a few at a time, and let them cook for about 30 seconds. Remove them with a slotted spoon and place them on the prepared baking sheet.
- Coat bites with Beaten Egg and Sprinkle the pretzel bites with coarse salt and bake for 10-12 minutes until golden brown.
